Wheaten bread is the term Northern Irish people use for brown soda bread. This is a recipe that I saved from my home economics class in school. I think that wheaten bread is delicious served with a bowl of soup, smoked salmon or prawn cocktails. My personal favourite is when it is just fresh out of the oven and I put some butter and jam on it – yummy! Get cooking and please let me know what you think!
Preparation time: 15 minutes
Cooking time: 1 hour
300 grams of whole wheat bread flour
100 grams of plain flour
1 teaspoon of salt
1 teaspoon of bicarbonate of soda
60 grams of butter
2 tablespoons of caster sugar
300 ml of buttermilk
1 tablespoon of rolled oats
1. Preheat your oven to 200ºC/gas mark 6.
2. Place the flours, salt and bicarbonate of soda into a bowl and stir to combine.
3. Using your fingertips, rub in the butter until the mixture resembles fine breadcrumbs.
4. Add the sugar and stir to combine.
5. Gradually add in the buttermilk until you get soft, but not sticky, dough.
6. Turn it out onto a floured surface, and briefly knead the dough (with your knuckles). Pop the dough into a lightly floured 20 cm cake tin, and shape into a round.
7. Bake for approximately 30 minutes.
8. Leave to cool on a wire rack for as long as you can bear and enjoy!
